Weekend Update

So it was another busy weekend at this end and you guessed it....no running again. I did get my situps in but that was it.

Saturday was my daughters Gymnastics "Demo Rumble" and her group got 2nd place. Here is a picture of her group posing for a group picture. It was very cute!

Then Sunday was Fathers Day and we had a BBQ/Pool party at our place. I made delicious grilled sardines, salad, vegetable quinoa and yummy fresh berry muffins. Check out these deliciously filled Omega 3 sardines:

The berry muffins I made is one of my favourite recipes that I have since modified to stick with my cleaner, healthier, whole food living/eating. Don't they look yummy!


So here is my modified recipe but I will also bracket what the original asked for:
Bela's Banana & Berry Muffins
1 cup strawberries, chopped
1/4 cup brown sugar (original recipe called for 1 cup white sugar.....that's alot)
1 1/2 cup whole wheat flour (original was white flour)
2 tsp cinnamon
1/2 tsp baking soda
1 banana, mashed
2 eggs
1/2 cup soy milk (original was 1/4 cup oil)
1/2 pint blueberries
Preheat oven to 350F. In large bowl whisk banana, egg, milk, sugar, strawberries. Add in flour, cinnamon, baking soda. Fold in blueberries. Bake for 30 minutes.`
Everyone loved these muffins. Now the brown sugar that I now use is this one:

Now my hubby had a really great Fathers Day! WHY you may ask. Well this is what our daughter did yesterday:

YES she scuba dived for the first time in our pool. Can I tell you that Scuba Diving Daddy was very very proud. She did phenomenal, especially since the tank was as big as her....LOL Hubby is working on getting her a small vest and tank.

  5. Hmmm Those muffin looks and sounds so good! I'm guessing I could substitute the soya milk for regular milk?

  6. Your daughter is doing it all. Gymnastics and now scuba diving...didn't she do a run with you a month or two ago? What a girl.

    The muffins looks really good. I haven't seen that sugar around here but I'm always on the look out for different sugar options.
