So we came home to a fully overgrown vegetable garden and alot of tomotaoes and I mean alot. So I am trying to come up with things to make it them. I had never made Gazpacho Soup so I thought I would try that since I also have alot of cucumbers from my garden. So I made this:
It was very good but I did feel like it couldn't be a full meal, I would need to eat something else with it. So I decided to freeze the rest and once my beans are ready to peel from my garden I will then place the cooked beans in the soup to give it more substance so I will definately post a picture of the soup with the beans when I make it. Here is the recipe for my Gazpacho Soup:
Gazpacho Soup
3 cups ripe tomatoes, seeded & diced
1 cup red pepper, diced
1 cup green pepper, diced
1 cup red onion, diced
1 cup celery, diced
2 cups cucumber, diced
1 tsp garlic, minced
1/4 cup red vinegar wine
2 cups vegetable juice
cayenne pepper, black pepper & paprika
Mix all the vegetables in a bowl. Divide mixture in half. Place one half in the blender and puree with teh garlic and the vinegar. Puree until smooth. Add the vegetable juice and spices. Add the puree mix to the bowl of diced vegetables. Refridgerate for several hours. garnish with plain yogurt and chopped parsley.
I will be making more yummy creations with my tomatoes, so please check back. I actually have something tomatoey brewing on the stove as I type.
Yesterday evening was suppose to be an evening out for DH and I. We had tickets to the Toronto FC soccer game so we headed downtown but we completely missed the game. When we hit the downtown core, what usually takes 10 minutes to drive, took 1.5 hours yesterday. DH and I were very annoyed with the city of Toronto to schedule way too many activities/events all within blocks from each other all at the same time. So the congestion was terrible and there was zero parking. There was a soccer game, a baseball game, FanExpo Convention, the CNE (Exhibition Fair), Ontario Place, a wedding, all within a few blocks right at the downtown waterfront core of Toronto. So as soon as there was a street that took us outta there we took it and cut our losses. We decided to go out for a nice dinner and catch a movie. So we went to one of our favourite Portuguese restaurants, the food is always fabulous but this time the service was not just bad, it was horrible. I could not wait to leave. The food was yet again delicious but it doesn't taste as good when you get crappy service. I had my usual....Grilled Codfish, it was very good:
We then went to watch "Piranha 3D"....is that a surprise?
There are scuba divers in this movie so ofcourse DH wanted to go see it. It was no my type of movie. There were so many gruesome parts, I had my eyes closed alot of the time. But DH enjoyed it so it wasn't a complete waste of a childless date night.
So I am hoping for a painless run tomorrow, wish me luck!


Sorry to hear about your pulled muscle. Hahaha, my wife and I went last night to see that movie. I am glad that one guy in the red speedos got ate up. He was annoying. Some of the scenes, though, I thought were not appropriate even for adults. The 3d action I also thought was lame for a 3d movie. Avatar was much better. Well, enough ranting for me today. Take care of that muscle.

ReplyDeleteI've tasted some pretty good Gazpachos but soup, cold or hot, is just not my favorite.
I'm like you regarding scary/gross movies, eyes closed and even hands over my ears. I used to LOVE spooky movies but now, can't stand them.
Ouch on the groin pull. Take it easy with the run. Don't want to pull it any more. That stinks on missing the game and being stuck in traffic like that. Very annoying. Hope you have a good Monday!
