What Have I Been Up To On This Taper Week?

Sorry for being absent from my blog lately, it just seems that there is always something that keeps me away.



This is my taper week and I have really been taking it easy. I really am not nervous about my race on Sunday, just more worried about the weather. They are calling for rain which I hate. I have been praying to the weather gods all week, lets hope they listen!

We had a nice family outing this week. I feel you really need to treasure those moments and take advantage of the weather before its too cold and snowy to enjoy (remember I hate the cold...LOL) So we decided to stay in our own town and enjoy it since it is considered one of the most beautiful towns, the greenest town and the safest town in Ontario!

We headed out to an apple orchard to just go buy some more local apples and my daughter asked for a candy apple which generally I try not to give her too many sweets and junk but it does have a fresh local apple under all that sugar so I agreed. She wanted a blue one (which I have never seen before, they are usually only red) and hubby wanted a red one and I couldn't resist this picture opportunity:



We also enjoyed their pumpkin patch and we also bought some pumpkins for me to do some baking with. There is a great recipe at the end of this post, so stick with me here!



There is also a fabulous cider and bakery that is just up the street from us. I found out about them when I went to the Caledon Farmers Market and I blogged about it here in my Mishmash Post. We stopped there and the smell of fresh baked bread was overwhelming, I just love that smell. We each got a little baked treat and we sat outside to enjoy the peace of being out in the country.


The fall colours here in Caledon this year are just beautiful and we drove around enjoying that:







Monday I headed out to hubby's gym to get a good last interval run in, the first 5 miles of the 8 miles was intervals, then just a steady pace afterwards. Tuesday I did a really amazing workout and I really overdid my squats and was in a bit of pain the next day so the rest of the week my workouts have been very easy.

So to the recipe that I promised earlier. I made a delicious Walnut Raisin Pumpkin Bread with the local pumpkin that we bought at the apple orchard. It was the first time I had made it and it was delicious. Here is the recipe:

Walnut Raisin Pumpkin Bread

2 eggs
1/2 cup soy milk
1 cup pumpkin puree
1/3 cup water
1 cup sugar
1 cup of white flour
1/2 cup of whole wheat flour
1 tsp cinnamon
1 tsp baking soda
1 cup chopped walnuts
1/2 cup raisins

Combine eggs, milk, pumpkin puree, water and sugar and blend well.
Add in the both flours, cinnamon, and baking soda. Mix well. Then add in the walnuts and raisins. Pour into a greased and floured loaf pan.



Bake at 350 degrees for 1 hour and voila......yummy Walnut Raisin Pumpkin Bread!



I will definately be making this recipe again soon. It was so easy, fairly healthy and DELICIOUS!

  1. I've got my fingers crossed for no rain! I agree with you on enjoying outings while you can AND enjoying those moments with the family period. I've never seen a blue candied apple either - so glad you said it was new to you too ;-) Um, can you send me a slice of that bread pretty please!
